Caviar is the quintessential luxury food which everyone has heard of and admires. There is no single "best" caviar; although everyone has a favorite. Beluga caviar varies in color from pale to dark gray and is among the rarest of all caviar. It is the most delicate-flavored caviar: buttery and creamy. Though smaller than beluga, osetra caviar has a more assertive taste: nutty and voluptuous. Osetra caviar ranges from gold (very rare) to dark brown and almost black. Sevruga caviar is smaller in grain than Osetra and yields light to dark grey colors and holds and an intense, rich flavor. Buying wisely is not the only caviar trick. To heighten the caviar experience, serve your caviar on a bed of shaved or cracked ice and caviar server with utensils. That'is not to say, though, that you have to stop there.
